The Riverside Mozart is an exceptional phenomenon. As one of the largest river cruise ships on the Danube, and certainly the most well-appointed, she knows – just like her famous namesake – how to captivate and constantly surprise her guests.
With 81 Suites, 5 Restaurants & Bars, Spa and Fitness area as well as butler service for every guest, we have created a wonderful foundation for the entire team to create unique guest and team experiences.

  • To manage the daily operation of the Dining outlets and Bars, to create a safe working environment and to ensure the best possible dining experience for all our Guests.

  • To make inner reservations and table assignments for Guests in the Dining Room.

  • To ensure that a professional, clean, neat and tidy appearance is kept in the Dining outlets and Bars at all times.

  • To supervise and to establish regular work schedules, section plans and rotations for the Dining outlet and Bar Staff.

  • To ensure that a five-star service is provided at all times and to deal with Guests complaints and comments in an efficient and timely manner.

Job requirements

General Responsibilities

  • To manage and engage in the daily operation of the Dining outlets and Bars.

  • To create a safe working environment and to ensure that all Dining and Bar Staff comply with the latest Health and Sanitation regulations (HACCP and all other Port Health Authorities) at all times.

  • To ensure the best possible dining experience for all our Guests and to provide special attention to Guests with special needs.

  • To train, coach, council, support and delegate all of the Dining and Bar Staff.

  • To guide the Dining and Bar Staff and to ensure that everyone is updated with relevant shipboard information at all times.

  • To monitor and develop the Work schedules, Section Plans and Vacation schedules and to conduct Performance Appraisals for the Dining, Butlers and Bar Staff.

  • To ensure that any Maintenance issues in Dining and Bar outlets are reported in a timely manner and that the work orders are followed up on accordingly.

  • To order, receive and monitor all cutlery, crockery and glassware for Dining and Bar outlets.

  • To ensure a smooth and efficient service during meal hours through constant communication with the Galley.

  • To manage and oversee the entire Wine and bar operation onboard.

  • To oversee the wine and beverage service in the Dining Room.

  • To ensure that the wine lists in all of the Restaurants are updated at all times.

  • Promote the connoisseur wine program by using tools such as wine tastings.

  • To execute all aspects of planning and organizing of upcoming cruises for the Dining outlets and Bars.

  • To ensure that all Dining and Bar Staff follow uniform guidelines and personal hygiene procedures according Company guidelines.

  • To ensure that all Dining and Bar Staff Work Registration Forms are completed correctly and handed in to the Hotel Director in a timely manner.

  • To ensure that Dining and Bar Overtime is submitted to the Hotel Director in a timely manner.

  • To adhere to, and to ensure that the Dining and Bar Staff adheres to all Company Policies and Procedures, Manuals and Directives.

  • Other responsibilities, as assigned, but not limited to the above.

Financial Responsibilities

  • To ensure that crockery and glassware breakages are kept to a minimum.

  • To monitor all cutlery, crockery and glassware inventory for Dining and Bar outlets.

  • To monitor and control the use of cleaning materials and consumables in the Dining and Bar outlets.

  • To monitor and control vacation schedules.

  • To monitor and to assist the Hotel Director in controlling all Dining and Bar expenditures to ensure that it stays within the limits of the Consumable and Budget.

  • To ensure that Company property is maintained properly and treated with respect at all times.

Safety Responsibilities

  • To ensure that the proper use of Personal Protective Equipment in the Dining Room work areas is implemented at all times.

  • To ensure that Safe Lifting Techniques are practiced at all times in the Dining Room.

  • To do In Port Manning duties as scheduled and as required by Company policy.

  • Emergency Duties:

  • To follow instructions on Safety Card.

  • To monitor the evacuation of Guests in allocated zone.

  • To participate in Guest/Crew Drills as per instructions.

Other safety responsibilities, as assigned, but not limited to the above.

Team Education & Training

  • Introduction of Job Duties and Departmental functions including continuous on-the-job-training and Safe Lifting Techniques for the Dining and Bar Staff.

  • Company Basics training and enforcement for the Dining and Bar Staff.

  • Identification and Development of all Crew members with supervisory potential.

Education/Position Requirements

  • College Degree/Diploma or Hotel Management School or Successful completion of an Apprenticeship in the Food Service industry required.

  • Minimum of three (3) years’ experience in a luxury international hotel property as a Restaurant Manager or two (2) years’ experience in the luxury cruise ship.

  • Must be fluent in English, written and spoken.

  • Excellent interpersonal and public communication skills.

  • Must have very good administrative skills (proficient in Outlook, Word and Excel).

  • Very good organizational skills are necessary along with the ability to multi-task.

  • Must possess excellent leadership and human resource management skills and the ability to interact with all levels of people.

  • Must be able to communicate and implement corrective action steps in an effective, yet diplomatic fashion.

Team Communication and Meetings

  • To schedule and conduct meetings with the Dining, Butlers and Bar Staff as required.

  • To attend meetings with the Hotel Director as required.

  • To constantly communicate with the Executive Chef.

  • To encourage and demonstrate good communication, excellent teamwork and continuous training, coaching and counseling.
